Happy Friday!!!! I was so looking forward to today….my boss is on vacation this week, so I’ve been doing the early shift every day plus overtime. By the end of my shift today, I’ll have worked almost 60 hours this week! I am SO READY for a 3-day weekend!!!
I’m heading to the Cape for July 4th weekend and I can’t wait. I haven’t been to the Cape since Memorial Day Weekend and I plan on just relaxing on the beach with my friends and family, eating great food, and not exercising at all 🙂
But before I go, I have a lot of great info for you to soak up. Keep reading!!

Chicken and broccoli pasta:
This recipe was boyfriend-approved, so you know it’s a good one!!
Ingredients:
-3 tbsp olive oil
-1 lb skinless, boneless chicken breast cut into 1 inch pieces …
-1 tbsp chopped onion
-2 cloves garlic, chopped
-2 cans diced tomatoes
-2 cups fresh broccoli
-salt and pepper to taste
-1 pinch dried oregano
-18 oz dry penne pasta (I used Ancient Harvest gluten-free quinoa and lentil pasta)
-1/4 cup fresh basil, chopped
-2 tbsp Parmesan cheese
1. In a large skillet over medium heat, warm oil and add chicken. Cook until slightly brush. Add onions and garlic and cook for about 5 more min or until garlic is golden and onions are translucent.
2. Add tomatoes, broccoli, salt, pepper, and oregano, and stir well. Bring to a boil. Cover and turn down heat and allow to simmer for 10 min
3. Meanwhile, cook pasta according to directions. Drain pasta and add it back to the pot. Pour the chicken sauce into pot and mix well.
4. Add basil and toss. Serve topped with Parmesan cheese.
This is a great recipe to make for a quick and easy dinner. I made this last Monday night for dinner and it fed me and Tim, plus we had leftovers! And it was sooooo yummy!!!
New Obsession: Bullet Journaling
I recently saw this article on Buzzfeed about bullet journaling. Fun little-known fact about me: I LOVE journals, planners, and stationary. I always love to browse the cute journals at TJ Maxx, and last year I bought a ban.do agenda that I rarely use. I’m more of a “to-do” list girl. I keep a journal next to my bed where I jot things down like recipes, blog ideas, and other random info. When I found out about bullet journaling, I knew I had to give it a try. I mean, first of all, THEY ARE SO PRETTY! And secondly, since you make them yourself, they’re completely customizable! Here is the link to the “official” website that has a ton of info. Also I recommend searching #bulletjournal on instagram for inspiration! I decided to start mine in July so I could try it out for the second half of the year. I purchased a May Designs journal (so many gorgeous options!), which I think for the entire year would be too small but it’s perfect for a first-time bullet-er like me! I set up my journal this week. So far, I have a page for the key and index, 2 pages for my future log, and then for July I have the month at a glance, July Habits, and July expenses. Then I go into my daily pages. I’m so excited to start using it regularly and I think it’s really going to help my scattered brain!! Check out pics of my journal below. I drew everything by hand, including all the lettering!
If you want to start your own, definitely read the articles I provided. It seems like a lot of work but it’s really not. And you don’t have to spend time making your pages look pretty! I just like them that way 🙂
Favorite Activities
I’ve done so much walking around the city the past two weeks, which I love! Two weeks ago, I spent the day with my BFF Michaela. We brunched, walked around the Public Garden, and went on a Swan Boat ride! It was a beautiful day and I had a blast.
That night we went out to a Vegas-themed party (weird), where I caught up with a bunch of people I knew in high school. We also made rosé SLUSHIES which were just as amazing as they sound!
Sunday I went home for Father’s Day. I visited my grandpa then BBQ’d at my aunt and uncle’s house. It was a great relaxing day with family.
Last Saturday was actually similar to the previous one. I went out to brunch with another BFF Shari for her birthday, and then we took a walk around the Charles River. I logged over 15,000 steps, and I think we walked around 5 miles!! It was another beautiful day, and the views around the Charles are spectacular.

I am determined to finish Two Down this weekend on the beach. I have a ton of books that I want to read this summer, so I gotta get moving!!
P.S. if you want a funny, quick read, you must check out the White Girl Problems series. They’re so good to read on the beach and they’re so entertaining. The newest one, American Babe, was just released and I can’t wait to read it! Yes I’m basic. Get over it.
Currently Netflixing
I finally finished Bloodline and all I have to say is, IT BETTER GET RENEWED!!! They cannot end the show like that!!
I started and am slowly making my way through Orange is the New Black season 4. I’ve seen a lot of tweets about how sad the ending is….luckily no actual spoilers! I think I’m about halfway done!
Can we talk about the Game of Thrones finale for a second? WOW WOW WOW WOW. Ok, that’s it (I said only a second!). Cannot wait until next year!
Favorite Bachelorette Moment
Is it just me or is this season suddenly sooooo boring now that Chad is gone? Nothing interesting is really happening! But I think my favorite moment would have to be when James Taylor was the only one who scored a goal in the soccer game and got to kiss Jojo! It was so cute, especially because he was getting down on himself for not being “cool, sexy, and athletic”. I’m calling this now: James Taylor for Bachelor if he doesn’t win!
That’s it for this week! I hope everyone has an amazing and safe Fourth of July weekend!!
