Favorite Exercise
ABC Plank. This is an exercise that Jordan put in my new program for July, and they are NO JOKE. My abs lit up almost instantly with these! If you’re looking for a new twist on the plank or “stir the pot”, give these a go. I only do letters A-M, but that’s enough! Try three sets and your abs will be sore for DAYS. Mine were!
Favorite Recipe
So I made this Asian chicken stir-fry for my meal prep this week, and it came out AMAZING. Sometimes, when I meal prep at the beginning of the week, I think my meals are going to come out awesome and they just come out sorta “meh”. Not this week! I was skeptical at first, because the marinade I used smelled kinda funky when my chicken was marinating. I was trying out a new one, and I had some regrets when I smelled it! I’m glad I was wrong! This meal is so good, I’ve been enjoying it all week and I’ll probably make it again in the very near future! Recipe below!
Ingredients:
Marinade (I used ___)
~2lbs Boneless Chicken Tenders, chopped
Quinoa
Veggies-I bought a frozen pack of broccoli/snap peas/carrots/water chestnuts (this is literally called ‘Stir-Fry Vegetables’)
- Chop your chicken into equal pieces. Place in a bowl and cover with marinade, so that the chicken is just completely covered. Sit aside and allow to marinade for 15-20 min
- During that time, start cooking the quinoa according to instructions
- Remove chicken from fridge and pour everything (including extra marinade) into a large wok. Cook chicken for about 10 minutes
- Add frozen veggies to wok and cook an additional 10-15 minutes, until chicken is browned and veggies are thawed completely.
- Lay quinoa on plate (or in tupperwear) and place chicken and veggies on top. Enjoy!
Favorite Activity
I had a jam-packed 2 weeks you guys! My 4th of July weekend was AMAZING! I was on the Cape with my family and wonderful boyfriend, Tim. My family had already been there for the entire week, but Tim and I arrived around 6:30 Friday night. We had dinner then headed out to the beach for a bonfire! Unfortunately, it was cut short because we saw lightning in the distance. We were able to enjoy the fire and the beach for about an hour before we had to leave. And it’s a good thing we did-it started POURING about 20 minutes after we got home! The rest of the weekend was filled with lounging on the beach, BBQing, and hanging out. I got to see some friends from Ithaca that I haven’t seen in awhile, which was awesome! It’s so good seeing old friends 🙂
Over the weekend, I did a bootcamp in the back yard of my Cape house for my mom and Aunt Sandy! We had a great time and they killed it. We did a tabata style workout for about 45 minutes. For the full workout, check out my Facebook page!
On Tuesday the 5th, Tim and I went to the Sox game with my cousin Lisa and her boyfriend, Mark. We had a great time sitting in the family section, lol!
Last weekend I was on the Cape again for Girls Weekend! I had 4 of my best girlfriends down with me. It was particularly special because our friend Nikki has been in vet school in Ireland for the past 3 years! She was only home that one weekend this summer, so it was so great to see her and hang out before she headed back to Ireland for her last year of vet rotations. We made the most out of the dreary weather, and went to Truro Vineyards for a wine tasting and then spent the rest of the day in Provincetown for lunch and shopping! We ended the day with a walk on the beach and popping some more bottles of wine. It was an amazingly relaxing and fun weekend!!
Currently Reading
I finally finished Two Down!! I loved it, it was a great read! I’m now starting Tony’s other book, One Long Night. Technically, they should be read in the opposite order than I read them in, so if you’re interested remember to start with OLN! I’m excited to read it because the characters are the same and I love Tony’s style of writing. For those that don’t know, these books were written by a member of my gym, Tony DiBona! They’re available on Amazon for anyone interested!!
Currently Netflixing
I finished OITNB S4…..on Saturday night….while I was sharing a room on the cape with my friends. I had headphones in my computer and I had to stifle my SOBS…..I won’t spoil it but O.M.G…so sad!
I’ve since started Penny Dreadful, which was on a list of shows to watch if you’re a fan of Game of Thrones. It’s sickeningly creepy and I obviously love it so far.
Favorite Bachelorette Moment
I literally don’t have one. Sorry to disappoint but this week was an absolute snore and a completely unnecessary episode. Give me hometowns or give me death.
(Although I guess we can laugh at this weirdness again)
