Happy Friday!! I hope everyone has been staying cool these past few weeks…Boston is in a serious heat wave! Hopefully it breaks soon, because I am OVER IT. My apartment has no AC and we’re *technically* not allowed to have window units, so none of us do. More about how I got heat exhaustion last weekend below….

Favorite Recipe
I made Italian Stuffed Peppers for Tim and I this past Monday. I didn’t exactly follow a recipe, because I had to modify the one I did read to make it low-FODMAP. But, Tim gave these a BIG stamp of approval and even ate the leftovers on Wednesday night! They did come out pretty good, if I do say so myself! Recipe below!
Ingredients:
-99% lean ground turkey
-Italian seasoning
-Fresh basil
-salt and pepper to taste
-1 can tomato sauce
-Cooked brown rice
-Olive oil
-4 red peppers, cut in half
-shredded mozzarella cheese
Directions:
1. Pour about 1 tbsp. olive oil into a large Wok or skillet. Brown the ground turkey for about 10 minutes
2. Add Italian seasoning, fresh basil, salt, pepper, and can of tomato sauce into the wok. Allow to simmer for another 10 minutes.
3. Add the cooked rice to the ground turkey mixture. Cook for another 5 min and preheat oven to 425 degrees.
4. Place halved peppers on a baking sheet or in a pan. They should be able to stay up on their own.
5. Scoop turkey and rice mixture into halved peppers. Fill up the peppers as much as you can!
6. Cook peppers for 35 min at 425 degrees. After 35 min, take peppers out of the oven, sprinkle shredded mozzarella over the top of each pepper, and put back in the oven for another 10 minutes.
7. Enjoy!!
**if you are NOT low-FODMAP, add 2 diced garlic cloves and half a diced onion in step 2**
Favorite Activity
I had 2 Cape-free weekends! Although I am missing the beach, I had a lot of fun staying in Boston and seeing friends. 2 weeks ago, I planned a night out with my cousin Angela, my friend Michaela, and my boyfriend and some of his friends to the Envoy Hotel rooftop bar. I have been DYING to check this place out!! I’ve seen so many pictures and I could not wait to go. And, it was an excuse to dress up, which I love and rarely get to do! The bar was everything I hoped it would be. Incredible views and great drinks…we only had one drink there before we left because it was so expensive, but definitely worth it.

Last weekend, I went kayaking with my friend Shari on the Charles. Remember how I said it’s been hot? It was almost 100 degrees on Saturday! It was really nice to be on the water, though, and it definitely didn’t feel that hot once we got out there. It was actually pretty nice!
That night I was supposed to meet up with my boyfriend Tim and his friends, but my body has other plans. After kayaking, we went to Fomu, which is a vegan ice cream shop. I’ve had it a bunch of times before, and I love it because it doesn’t bother my stomach. Well, about an hour after we finished eating and I got home, I started feeling REALLY sick. I had been sitting in my hot apartment, resting for the night ahead. I tried to get out of bed and fainted. I was dripping sweat. My stomach was so bloated I could barely move. And I was crying hysterically for no reason. I knew something was wrong but I was so scared because I was alone in my apartment. I took a freezing cold shower, and that didn’t help. I kept chugging water but that seemed to make me feel worse. I could barely make it back and forth from the bathroom! Tim wanted to take me to the hospital, but I just wanted to go home to my parent’s house in Framingham. So that’s what we did. He picked me up and as soon as I got in the car with AC, I started feeling better. I stayed on a mostly liquid diet for the rest of the day, slept in Framingham with AC, and felt better by Monday. I still don’t know exactly what happened, but it could have been a combination of something I ate and overheating with dehydration. Definitely will be making sure I’m more careful from now on in the heat!

I’ll admit….I’ve been re-reading all the Harry Potter book in anticipation of the new one being released this weekend. I can’t tell you how many times I’ve already read the series, but I just love it so much!!

Favorite Bachelorette Moment
I’m over it. Jojo doesn’t deserve to be the bachelorette, I’ve said so from day 1. I’ve always said she’s in it for the fame, and she made it so obvious when she kept asking where Aaron was during Jordan’s hometown date. I think we all knew Jordan would make it to the final 2 but ROBBY? Guy creeps me out. And clearly has a lot of ex-girlfriend drama that isn’t cleared up. Can this season be over already?
Give me Bachelor in Paradise or give me death. SO ready for that shitshow!
Also….LUKE FOR BACHELOR. PLEASE CHRIS HARRISON JUST DO IT.
