Friday Faves: March 25

Happy Friday! I’ve been looking forward to the end of this week! This week was pretty uneventful for me. I was still recovering from my wisdom teeth removal, but I had to go back to work Monday so I was suffering a little. I also panicked and thought I was having complications with my teeth, so I ended up going back to the dentist on Wednesday! Don’t worry though-everything’s fine and there were no complications whatsoever. It was just me being paranoid! I woke up today with no pain for the first time since the surgery, and I haven’t taken pain meds today, also for the first time since last Thursday! Progress!

I’m still scared to chew with my back teeth though…those holes are really freaking me out

This will be a shorter post today! Also, starting next week I’ll be doing these every other week, instead of every Friday!

Favorite Recipe of the Week

So,  this isn’t really a recipe. This week I was still having trouble eating solid foods, so when I was meal prepping I took that into account. I needed something that would be easy to eat. I decided on boiled and shredded chicken. Boiling chicken is one of the easiest and tastiest (in my opinion) to make chicken. All you need is a container of low-sodium, fat-free chicken broth. Toss your chicken in, along with any seasonings you like (I used pepper and basil this week). Let it boil for about 45 min, then shred it with 2 forks. It literally falls apart. This is usually how I make chicken if I know it’s going in a salad. It ocmes out super juicy, even when you don’t shred it! This week I paired it with mashed sweet potato for a meal that would be easy on my poor teeth đŸ™‚

Favorite Activity

Well, I didn’t really do any activities this week or last weekend. But I think the best part of last weekend was my two best friends Ari and Michaela and my boyfriend Tim coming to visit me while I was recovering in Framingham. They cheered me up so much! I was so happy to have actual human contact, I was going completely stir-crazy on my couch at home! I also went outside of my house Saturday (for the first time since Thursday) to get fro-yo with Tim.

Also thanks to my family, especially my mom and dad for taking care of me last weekend. On Friday night, all five of us (mom, dad, my brother Mike and sister Catherine) watched Shark Tank together, and I honestly couldn’t remember the last time we all did something like that as a family! It was so nice. It goes to show, no matter how old you are, sometimes you just need to be taken care of by your mom!
